Apple Cream Cheese Bar
1 1/2 cups all purpose flour
1/2 cup packed light brown sugar
1/4 cup (1/2 stick) butter
1 (8oz.) package of cream cheese
1/4 cup plus 1/3 cup sugar
2 1/2 cups thinly sliced peeled baking apples
1 tbsp lemon juice
1 tsp ground cinnamon
1 tsp ground nutmeg
caramel or butterscotch topping (optional)
- Heat oven to 400 degrees F. In mixing bowl,combine flour,brown sugar,butter,egg,and 1 tsp vanilla; beat at med speed until crumbly. Press crumb mixture into bottom and up sides of 8 or 9 inch square pan. Bake 6-8 minutes or until lightly browned. remove from oven; cool.
- Increase oven temp to 450 degrees F. in another medium bowl, combine cream cheese and 1/4 cup of sugar; mix well. Mix in egg and 1/2tsp vanilla until well blended.
- In a seperate bowl, toss apples with lemon juice. Add remaining 1/3cup sugar,cinnamon,and nutmeg; mix lightly. Pour cream cheese mixture into crust; spoon apple mixture over cream cheese. Bake 10 mins. Reduce oven temp to 400 F; bake an additional 25 mins or until knife inserted in the center comes out clean. Cool. Cut into squares. Serve with warm ice cream topping, if desired. Store in fridge.
